Chocolate: A Baker's Ingredient Guide

How to buy, store, melt and substitute chocolate in baking — plus which recipes put each type to work.

Chocolate is fermented, roasted cacao ground with sugar and extra cocoa butter. For baking, what matters is the percentage on the label (how much of the bar is actual cacao), the form (bar, chip or powder), and how it's processed.

Storage

Keep chocolate wrapped in a cool, dark cupboard (60–70°F). Never refrigerate it: condensation blooms the surface white, and chocolate absorbs fridge odors permanently. Properly stored, dark chocolate keeps well over a year.

My chocolate turned white — is it safe?

Yes. That's bloom: cocoa butter or sugar rising to the surface after temperature swings. It looks dull but bakes perfectly fine.
